Recipes du Jour

Salmon Chowder

Serves 4 (I usually double this recipe, as everyone loves it so much, and we like at least one day of leftovers).

Ingredients

2 T. olive oil
8 scallions, chopped
1 T. flour
2 c. 1% milk (I haven’t tried it with soymilk, rice, almond or coconut milk, but it may be good!)
1/2 t. salt (optional)
2 t. hot sauce (I usually just shake it till it looks good)
pepper to taste
2 c. cooked wild rice
1 # fresh salmon, no skin, cut into 1” cubes

Directions

Heat oil. Saute scallion a few minutes. Sprinkle in flour and whisk in milk. Gently cook, stirring, 3-5 minutes. Don’t let the sauce boil. Season with salt, pepper and hot sauce. Stir in rice. Turn to medium low and add salmon. Cook until done and serve. Yum!!! This is a super-healthy recipe, and one that Dad found in a magazine the summer of ‘08. We made it at his house when he was getting reacquainted with some new recipes and cooking techniques.
