Oh my oh my oh my…
Ingredients
1/2 stick butter
1 large sweet apple, peeled, cored, and cut into 1/4 inch wedges
1 T cinnamon
pinch cloves
1/2 c skim milk
1/2 c flour
4 large eggs
3 T sugar
1/2 t vanilla
1/4 t salt (optional)
powdered sugar for dusting
Directions
Put oven rack in the middle and preheat oven to 450 degrees. Melt butter in skillet over medium heat, then transfer 2 tablespoons to a blender. Add apple wedges to skillet and cook, turning over once, until beginning to soften, 3-5 minutes. Sprinkle cinnamon and cloves on top and stir. While the apple is cooking, add milk, flour, eggs, sugar, vanilla, and salt to butter in blender and blend until smooth. Pour the batter over the apple and transfer your skillet (yes, it’s a LeCreuset skillet) to the oven. Bake until the pancake is puffed and golden (and I assure you, it WILL be puffy and golden), about 15 minutes. Dust with powdered sugar, cut in half and serve immediately.
I’ve always wanted to find a good apple pancake recipe, and amazingly, this was the first one I found, tried, and went crazy over. I tweaked it and added the cinnamon and cloves. I find that everything tastes better with cinnamon and cloves in it, don’t you? And we also use maple syrup for some extra yumminess. Mmmmmmmmm, soooooooo good…
