Piquant Meat Loaf

This recipe comes from Pam Girard’s cookbook, “If It Tastes Good, Who Cares?” that I edited and published for her in the early 90’s.

Ingredients

2/3 c dry bread crumbs
1 c milk
1 1/2 lbs lean ground beef
2 eggs, beaten
1 small onion, chopped
pinch salt
1/2 t sage
pepper to taste
6 T brown sugar
1/2 c ketchup
1/2 t nutmeg
2 t dry mustard

Directions

Mix meat with crumbs, milk, eggs, onion, salt, sage and pepper. Form in pan. Top[ with mixture of brown sugar, ketchup, nutmeg and mustard. Bake about one hour at 350 degrees or until it’s crusty on the edges.

This recipe can be doubled; have one in the freezer. If you don’t have enough meat to make two meat loaves, make a double batch of the topping and freeze it.
