Turkey Sausage, Shrimp and Brown Rice Jambalaya

Serves a whole lot of people, especially if you double it, like I do!!.

This is another of Dr. Gott’s amazing recipes, cooked for Mom when she got out of the hospital in April of 2007. If you can’t find spicy turkey sausages, the regular kind are just as saucy!

Ingredients

2 T olive oil
1 large onion, diced
2 cloves garlic, minced
2 stalks celery, diced
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
3/4 pound spicy turkey sausage, thinly sliced
1 T chili powder
2 t dried thyme
1/2 t cayenne pepper
1 t salt (or to taste)
1 1/2 c uncooked brown rice
1 28 ounce can diced tomatoes, undrained
6 cups chicken or vegetable broth
3/4 pound peeled shrimp

Directions

Heat oil in large pot over medium-heat (yup - LeCreuset works great). Add onion, garlic, celery, and peppers, and cook, stirring until onion is soft and translucent, about 5 minutes. Add sausage, chili powder, thyme cayenne, and salt. Stir to combine and cook for about 1 minute. Add tomatoes, broth, and rice. Bring mixture to a simmer, reduce heat to low, cover, and cook until rice is tender, stirring occasionally, about 45 minutes. Just before serving, raise heat to high, add shrimp, and cook, stirring, until shrimp is cooked through, about 3 minutes more. Serve hot. Serves 4-6. Another of Dr. Gott’s amazing recipes.
I double this, as it’s so tasty fresh or heated up the next day (or two or three!)
